Grilled Coconut Shrimp

A delicious and flavorful dish! Coconut marinated shrimp is a great way to add tropical flavors to your shrimp. Here's a simple recipe to make coconut marinated shrimp:


Ingredients:

· 12 large shrimp, peeled and deveined
· 1/2 cup coconut milk
· 2 tablespoons coconut oil
· 2 cloves garlic, minced
· 1 tablespoon grated fresh ginger
· 1 tablespoon lime juice
· 1 teaspoon honey
· Salt and pepper to taste
· Fresh cilantro or parsley, chopped (optional)


Instructions:


1- In a blender or food processor, combine coconut milk, coconut oil, garlic, ginger, lime juice, honey, salt, and pepper. Blend until smooth.
2- Place the shrimp in a large bowl or ziplock bag. Pour the coconut marinade over the shrimp and toss to coat evenly.
3- Cover the bowl or seal the bag. Refrigerate for at least 30 minutes or up to 2 hours.
4- Preheat grill or skillet over medium-high heat. Remove the shrimp from the marinade, letting any excess liquid drip off.
5- Grill or sauté the shrimp until pink and cooked through, about 2-3 minutes per side.
6- Garnish with chopped cilantro or parsley, if desired.
7- Serve immediately and enjoy!

Some variations:

· Add some heat with diced jalapeños or red pepper flakes.
· Add some citrus zest like lime or orange.
· Serve with a side of tropical fruit salad or coconut rice.
