Island Grilled Catfish

Ingredients for the Grilled Catfish:
• 4-7/9 oz Guidry’s Catfish Filets
• Juice of one lime
• Jamaican Jerk seasoning to taste


Ingredients for the Island Sauce:
• 5 tbsp unsalted butter
• 3 tablespoons fresh lime juice
• 1 cup diced bananas
• 1 cup diced pineapple
• ½ cup pecans, chopped


Clean and preheat grill to 400 degrees. Spray grill with nonstick cooking spray. Season fish with lime juice then seasoning. Place seasoned catfish on hot grill for 4-5 minutes per side or until fish flakes easily with a fork. Remove and let rest.

Heat a small cast iron skillet on grill. Add butter and lime juice and heat until melted. Add bananas, pineapple and pecans. Cook until fruit is heated through, and the juice is thickened, stirring constantly. Pour over fish and serve. Serve over fresh salad greens for a light lunch.
